Chef Cyril Cheype
Native of Corrèze, Cyril CHEYPE began his career in Paris. He then travelled to South America where he was executive Chef in high level restaurants in Argentina and Uruguay, promoting French gastronomy. Following the experience in Uruguay, he joined Bistro Français in Buenos Aires, Argentina. The desire for a new experience brought him to Park Hyatt Paris Vendôme in 2001 where he was the Executive Sous-Chef. In 2005, he ventured overseas and opened the Palacio Duhau - Park Hyatt Buenos Aires as Executive Chef, with a staff of 72 and 3 restaurants, including 1 gourmet restaurant with its renowned wine cellar. Looking for a new challenge, Cyril Cheype returned to France in 2010 to the Hyatt Regency Paris Charles de Gaulle.
Today, heading the Restaurant Le 3e at Hyatt Regency Nice Palais de la Méditerranée, he creates a menu which reflects his talent and identity and leads a team of passionate professionals. Local seasonal products are carefully chosen to highlight delicious and colorful Mediterranean gastronomy. The choice of the best products in close collaboration with the local producers, the most perfect cooking to reveal the finesse of the flavors and a modern presentation in greatest details: all in harmony with the seasons.
